Guajillo is the name for the dried Mirasol chile. It is a slightly berry/fruity flavored chile with lightly smoky/cocoa undertones. Mild to medium-hot heat, 2500-5000 heat units (Scoville scale). Used to flavor all kinds of meats, especially chicken. Also great in salsas, sauces, soups, and stews. Often in Harissa. With a fruitier flavor than many other chiles of its kind, this variety adds a tangy, berry-like punch to its spicy flavor profile.
